Mutton Biryani – The perfect appetizer

If you are a non-vegetarian or thinking to start being one then biryani could be the perfect choice. From a person next door to the Bollywood superstar Salman Khan we are acquainted to biryani lover everywhere. First of all, let’s see about the basic types of biryani. Biryanis are basically dum coked or non-dum cooked. If we cook rice and meat together then it is called non-dum cooked but if we slightly cook meat first and then along with rice then it is called dum cooked. The following ingredients and the procedure will help you make a finger licking delicious Mutton Dum Biryani.

Things to keep in mind before cooking;

• Always use tender meat to cook biryani, as it will give you awesome products.
• Never overcook mutton because it will make it hard so cook only as much needed.
• To tenderize the meat, marinate it with yogurt and oil.
• Mutton should always be cooked on low flame.
• Quality of water also matters so chose accordingly.

Ingredients & constituents required:

• 3 Tablespoon Olive oil
• 2-3 Tomatoes
• 3 cup aged basmati rice soaked in water for 25 minutes.
• 500ml – 750ml of water
• Salt as per taste
• 1/4th cup of coriander leaves
• 1/4th cup of mint leaves
• 5 – 6 green chilies
• 1 ½ tablespoon of garam masala
• 2-3 thinly sliced average sized onions
• 10 cloves
• 5 green cardamoms
• 1 ½ inch cinnamon stick
• 2 black cardamom
• 1 small nutmeg
• 2-3 bay leaves
• ½ strand of mace
• 1 tablespoon black cumin
• 2 star anise
• Black pepper

Guidelines for Marinating

• 1 Kg tender mutton of lamb, chopped as per your desired size or medium sized would be perfect.
• 1 tablespoon red chili powder
• ½ tablespoon turmeric powder
• 2 tablespoon ginger garlic paste
• 2 tablespoon garam masala or biryani masala if you can get
• a little amount of salt
• 2 tablespoon olive oil
• 1 ½ cup yogurt (Remember you are using tomatoes also. Therefore, do not use sour yogurt, as it will make rice very sour).

Procedure of making mutton biryani

Getting into to make mouth-watering biryani dish. Here are the quick steps to make your own delicious Mutton Biryani:

1. First of all, wash your rice and soak it in water for 25 minutes after that use a strainer and keep the rice aside in a different bowl.

2. Now wash the mutton carefully and marinate it using the ingredients for about an hour. Remember marination for an hour will do but overnight marination is best.

3. Take a pressure cooker of heavy bottom pot and heat it with the oil. When the oil is heated up just add the dry spices and sauté it until they start sizzling.

4. Next step is to add the green chilies and onions to the oil and keep it frying until they turn brown.

5. Add coriander and mint leaves, further sauté them too for a minute or two.

6. Add the tomatoes and little salt to melt tomato. Keep on stirring it until it gets soft and pulpy and that raw smell of the tomato is vanished. (Note: This step can be omitted if you do not like tomatoes but tomatoes add a tangy taste to the mutton biryani. So, it is recommended to add tomatoes)

7. Then add the marinated lamb meat and sauté it for 4-5minutes, further cook it to 4-5 whistles in the pressure cooker on a low flame. Occasionally stir the mutton to prevent burning and then open the lid after the pressure is released. You will be able to see thick gravy and remember the thickness of gravy totally depends on the quality of the meat. If you observe watery gravy then cook it with open lid until the water evaporates and you get a thick gravy.

8. Further, add coriander, garam masala/biryani masala, and mint to it. Sauté it until you smell the tangy flavor of it. Add 500ml of water and then rice after you see a boil in it. Alter salt as per your choice and keep on cooking until the water is evaporated.

9. Keep on cooking until the rice is fully done or perfect. You can add some warm water if the rice remains uncooked and the water is evaporated. Remember to add only warm or hot water only if needed. When the rice is cooked, cover the pressure cooker with its lid and keep on cooking for more 10 to 15 minutes on a low flame. Turn off the flame and wait for the pressure inside the cooker to be released. Turn off the flame just before when it is going to whistle for perfect dish.

10. After the pressure goes off then open the lid and fluff the rice gently.

11. Your delicious mutton biryani is ready. Do not forget to serve it with onions, shorba and raita. Although it is easy to cook but if you do not have time then you can just order this delicious mutton biryani using variety of freshmenu offers.
