Palak Dhokla Recipe in Roman English/Urdu

Palak aur dhokala do aisi chizen hain, jo behad healthy hoti hain. Aur jab donon chizen ek sath aa jayen, to fir aap khud samajh sakte hain ki ve sehat ke liye kitani faydemand jonggin. Aisi hi ek dish hai Palak Dhokala ya Spinach Dhokla. Ye dekhne men hi nahin khane men bhi bahut testy hota hai. Aur ise bachche se lekar bade tak shauk se khate hain. Zaruri Saman (Ingredients):
Suji (Semolina) - 01 cup, 
Besan (Gram flour) - 01 cup, 
Palak (Spinach) - 250 gram, 
Taza dahi (Fresh curd) - 1 1/2 cup, 
Tel (Oil) - 04 bade chammach, 
Hari mirch ka pest (Green chilli pest) - 01 chhota chammach, 
Adrak pest (Ginger pest) - 01 chhota chammach, 
Nimbu ka ras (Lemon juice) - 02 chhote chammach, 
Eno fruit salt - 02 chhote chammach, 
Curry patta (Curry leaf)- 10-12 adad, 
Rai (Yellow mustard) - 1/2 chhota chammach, 
Hari mirch (Green chilli) - 2-3 (lambai men kate hue), 
Til (Mole) - 02 chhote chammach, 
Namak (Salt) - 1 1/2 chhota chammach.

Palak ka Dhokla Banane ki Recipe:
Palak ka Dhokla banane ke liye sabse pahle palak ki mote danthal hata den aur use achchhi tarah se dho len. Jab palak ka pani puri tarah se nithar jaye, use mixer men mahin pees kar uska pest bana len.

Ab pisi hui palak ko ek bowl men nikalen aur usmen dahi mila len. Iske baad suji, 1 chhota chammach tel, 1/2 hari mirch ka pest, 1/2 adarak ka pest, 1/2 namak, 1/2 ninbu ka ras milayen aur mixture ko achchhi tarah se mikx kar len.

Agar mixture gadha ho to usmen thoda sa pani mila len aur fir use achchhi tarah se mix kar len. Iske bad ise 30 minute ke liye dhak kar rakh den. Ab ek dusra bowl len. Usmen bacha hua dahi aur besan dalen aur use achchhi tarah se mix kar len. Iske bad hari mirch, adarak ka pest, bacha hua namak, 1 chhota chammach tel, 1 chhota chammach nimbu ka ras dalen aur mila len.

Agar ye mixture gadha ho, to ismen thoda sa pani mila len aur fir ise 15 minute ke liye dhak kar rakh den. Dhyan rahe ye donon ghol pakaudi ke ghol jaise hone chahie, na zyada patle, na zyada gadhe. Nahin to dhokla achchha nahin ban payega.

Ab dhokala banane ki bari hai. Iske liye ek bada cooker len aur sath hi ek chhota bartan bhi, jo cooker ke andar aaram se aa sake. Ab chhote wale bartan ki andar ki layer par tel lagakar use chikna kar len. Iske baad ek chhota chammach eno fruit salt dalen aur use achchhi tarah se milakar tel wale bartan men palat den.

Isake bad besan ke ghol men bhi 1 chammach eno milayen aur use bhi chala kar palak vale mixture ke upar dal den aur chammach se barabar kar den. Ab cooker men 2-3 cup pani dal kar use garam karen. Jab pani ubalne lage, usmen jali wala stand rakhen aur uske upar mixture wala bartan rakh den. Ab cooker ke dhakkan ki siti nikal kar cooker ko band kar den aur medium anch par ise 20 minute tak pakne den.

20 minute men apka dhokla taiyar ho jayega. Yah chek karne ke liye ek chaku ki noke dhokle men gada kar nikal len. Agar chaku men dhokla chipak nahin raha hai, to iska matalab hai ki wah puri tarah se taiyar hai. Agar dhokla chaku men chipke, to use thodi der aur paka len.

Dhokla ke pak jane par use utar kar niche rakh len. Iske baad ek tej chaku ki madad se dhokla ke kinaron ko bartan se chhuda len. Iske baad dhokala wale bartan ko ek thali men rakh kar palat den aur upar se thakathaka den. Isse dhokla plate men nikal aayega.

Ab dhokla ko chaku se apne manapasand size men kat len aur ismen tadka lagane ki taiyari karen. Isake liye ek pan men tel garam karen. Garam hone par usmen rai ke dane dalen. Jab rai ke dane tadakne lagen, usmen currry patte aur lambai men kati hui hari mirch bhi dal den aur thoda sa bhun len. Hari mirch jab halki si bhun jaye, pan ko uthayen aur use dhokle ke upar barabar se udel den.

Ab apka swadist Palak Dhokla khane ke liye taiyar hai. Ise sarving plate men nikalen aur sauce ya manchahi chutney ke sath pesh karen.
