Sweet and Sour Mango Pickle Recipe in Roman English/Urdu

Garmi ke mausam men Aam (Mango) sabka khaas ban jaata hai. Aam se tarah-tarah ke pakwan bhi banaye jaate hain. Aaj hum aapko bataa rahe hain Aam Ka Khatta Meetha Achar banane ki recipe, Ummeed hai aapko pasand aayegi. 


Aam ka Khatta Meetha Achar Banane ka Tarika
Zaruri Saman (Ingredients):
Kachche aam (raw mango) - 01 kg,
Pisee shakkar (fine sugar) - 01 kg,
Sirka (vinegar) - 1/4 cup,
Kishmish (raisins) - 50 gram,
Chhuhare (dry dates)-barik kaṭe huye - 6-7,
Saunf (fennel)-bhoon kar peesi huyi - 25 gram,
Kali mirch (black pepper)-bhoon kar peesi huyi - 25 gram,
Jeera (cumin)-bhoon kar peesa hua - 25 gram,
Chironji - 02 chhote chammach (tsp),
Lal mirch powder (chilli powder) - 01 bada chammach (tbsp),
Khane wala rang (orange color) - 01 chutki,
Kala namak (black salt) - 01 chhota chammach (tsp),
Namak (salt) - zarurat ke mutabik.

Aam ka Khatta Meetha Achar Banane ki Recipe:
Aam Ka Khatta Meetha Achar banane ke liye sabse pahle aam dho kar chheel len aur fir kaddukas kar len.

Iske baad 1 bada chammach namak lekar aam ke gude par chhidak kar achchhi tarah se mila den aur 2 ghante ke liye rakh den.

2 ghante baad ek kadai men pisee shakkar aur kaddukas kiya aam milakar gais par medeum aanch par pakayen.

Jab shakkar pighal kar sheeraa ban jaaye, usmen saunf, jeera, kali mirch powder aur kate hue chhuhare daal den aur beech-beech men chalate rahen. Mixture gadha hone par usmen kishmish, chiraunji daal den aur 2 minute pakayen.

Iske baad mirch powderr, kala namak daalen aur 2 minute aur pakayen. Uske baad dhakkan band karke gais ŏff kar den.

Ab aapka Aam Ka Khatta Meetha Achar taiyar hai. Thnda hone par ise kaanch ke saaf jaar men rakh den aur khane ke saath chatkhare lekar khaayen.
